Mediterranean Pita Sandwiches

  • 2 Red Peppers
  • 3 small Zucchini
  • 1 Red Onion
  • Thyme
  • Onion Powder
  • Oregano
  • Salt and Pepper
  • Olive Oil
  • Feta
  • Hummus
  • Tzatziki
  • Spinach
  • Pita Bread
  • Kalamata Olives (optional)

Dice the vegetables and mix them with olive oil, oregano, thyme, onion powder, salt and pepper. Roast them in the oven at 425 degrees. We did 10 minutes then turn and 10 more minutes.

Warm up your pita bread and then get layering.

Hummus, Spinach, Vegetables, Feta, Kalmata Olives, Tzatziki
